½ cup long grain white rice
½ cup quinoa, rinsed
1 tablespoon olive oil
12 oz. mild salsa (feel free to use medium or hot if your taste buds can handle it)
1 cup frozen super sweet corn
½ teaspoon cumin
½ teaspoon salt
black pepper to taste
1¼ cups water
